My culinary journey
My journey in the culinary world is a testament to dedication and a relentless pursuit of flavor. Each dish I create is a reflection of my passion, drawing inspiration from diverse cultures and the freshest ingredients. I aim to deliver not just food, but an unforgettable experience that delights the senses and nurtures the soul.
About Alessandro
My journey as a chef began in my family home in Sicily, Italy, where I grew up watching my mother and Nonna prepare meals with love and tradition for our large family. Those moments in the kitchen inspired my passion for food, hospitality, and creating experiences that bring people together.
Driven by a dream to grow beyond my roots, I left home and continued my culinary journey in Switzerland, where I refined my skills and deepened my appreciation for quality ingredients, craftsmanship, and elegant presentation.
My career then took me to the Middle East, beginning in Qatar and later to Dubai, UAE, where I became part of some of the region’s renowned hospitality and dining destinations. I worked with the team at Four Seasons Resort Dubai at Jumeirah Beach under the celebrated Italian restaurant Scalini Dubai, followed by experience with Jamie Oliver Kitchen in Dubai Hills. I also became part of the culinary team at Armani Hotel Dubai, contributing to the deli concept within the iconic Burj Khalifa.
Expanding my international experience further, I was entrusted by our parent company Emaar, to be part of the pre-opening team of Palace Hotel, an opening project of Emaar Properties in Egypt before returning to Dubai. Today, I continue my journey with Vida Dubai Mall while the Burj Khalifa area undergoes renovation and development.
Throughout every stage of my journey—from Sicily to Switzerland, Qatar, Egypt, and Dubai—my passion has remained the same: creating memorable dining experiences through authenticity, creativity, and heartfelt hospitality.

Pan-seared scallops with saffron risotto
Perfectly seared scallops served atop a creamy saffron risotto, finished with a sprinkle of fresh herbs. A harmonious blend of sea and land.
Slow-braised lamb shank with root vegetables

Truffle mushroom pasta

Grilled sea bass with lemon-herb butter
Fresh sea bass fillet grilled to flaky perfection, drizzled with a bright lemon-herb butter and served with roasted asparagus.
Duck confit with cherry reduction
Crispy duck leg confit, served with a sweet and tart cherry reduction, paired with creamy potato gratin. A truly decadent experience.
Spicy shrimp linguine
